Baking combines practical skill with an understanding of ingredients. During baking, heat causes some water to evaporate, changes protein structure, and gelatinizes starch. The surface may also brown through chemical reactions, including the Maillard reaction, which involves sugars and amino compounds and contributes to the aroma and flavor of baked foods.
Bakers adjust time, temperature, hydration, and fermentation according to the recipe and desired result. Their work can also include planning production, checking ingredients, cleaning equipment, and arranging products for customers.
