Taste, also called gustation, is the sense that allows humans to detect and identify chemical substances present in food and drinks. It mainly depends on taste receptors located in taste buds, which are found mostly on the tongue but also in other areas of the mouth and throat.

When food molecules interact with these receptors, they generate signals that travel through nerves to the brain, where they are interpreted as different taste sensations. The five basic tastes recognized by humans are sweet, salty, sour, bitter and umami, a taste often associated with savory foods containing substances such as glutamate.

Taste works together with smell, texture, temperature and other sensations to create the complete experience of flavor. This is why food can seem less flavorful when the sense of smell is reduced, for example during a cold. Taste helps guide food choices and can protect the body by helping detect potentially harmful substances, such as some bitter compounds.

Taste perception can vary between individuals and may change with age, health conditions, medications or lifestyle. This sense plays an important role in nutrition and the enjoyment of eating.
